I have heard some concerns that engine oil may not warm up enough to get rid of moisture also and can cause damage from that.

Over the last few years and especially when it's cold outside, as it is now in the rocky mountains, I have noticed that when my engine is warming up and is right around that notch between the 40 degree mark and the 80 degree mark, it sees to run really well. Good acceleration, lots pf pep and good peddle response. As it warms up further it becomes the usual engine that I just accept and take for granted. So I have been wondering if anyone here knows anything about running these engines at that lower temperature (approximately 140 degrees F or 60 degrees C) for sustained periods of time. I'm fairly sure you cannot get a factory thermostat that cold. But a standard one could certainly be modified to maintain that temperature. Question is - what, if any, are the long term consequences of doing that? Any and all thoughts/discussion will be appreciated.
