I think wvo aged a year or so is great. Just take what's on top and get rid of the dregs (responsibly). I don't think you'd get any more junk out of it by using a centrifuge. A centrifuge is just another form of acceleration, which is same as gravity...I'd say a year of good old fashioned gravity is as better than 30 minutes in a centrifuge. When I get old wvo in plastic containers such as "cubies," I position the containers over a barrel and cut through the cubie plastic a half inch above the sediment. The good oil will flow out and the sediment will remain in the bottom of the plastic container.
